Key Lime Pie Popcorn Bars with Pop Secret

As kids my sister and I would build forts, especially on cold/rainy days when we couldn’t go outside to play. We would have so much fun gathering all the blankets and pillows and designing how we wanted our fort to look. Then we would grab some popcorn and watch a movie from our fort. Right now is the perfect time to build a fort with your family, and serve a yummy snack using Pop Secret popcorn.

Dustyn likes plain jane popcorn. Kenny and I like to spruce up our popcorn, so I made these key lime pie popcorn bars! They taste amazing, if I do say so myself!

Key Lime Pie Popcorn Bars

Key Lime Pie Popcorn Bars

Ingredients

  • 1 bag of Pop Secret
  • 1 stick of butter
  • 4 cups mini marshmallows
  • Box of Lime Jello
  • 1/4 cup white chocolate, melted
  • 12 Graham Crackers

Instructions

  1. Pop your Pop Secret popcorn. I used the homestyle.
  2. Remove un-popped kernels and set the popcorn aside.
  3. Melt your stick of butter over low heat.
  4. When it is completely melted add your marshmallows.
  5. Keep stirring until all the marshmallows are melted and blended.
  6. Add in about 1/2 cup of the powdered lime jello to to marshmallow mixture.
  7. Remove from heat and add in the popcorn.
  8. Line your cookie sheet with parchment paper and your graham crackers.
  9. Cover the graham crackers with your popcorn/marshmallow mixture.
  10. Take another piece of parchment paper and smush down the popcorn mixture.
  11. Drizzle on your melted white chocolate.
  12. Stick in the fridge for 5 minutes to harden.
  13. Cut into bar shapes.

We had a fun afternoon building our fort and hanging out together. We used our dining room table and just kept draping blankets over each other. That way they would stay put. Carsyn really enjoyed hanging out in the fort with Dustyn. Sometimes it is difficult to find things they can do together because of Carsyn’s Cerebral Palsy, but it was nice and cozy in there with all the blankets and pillows. He kicked back and they had a lot of fun together.

    AHHH as a native South Floridian, I have to write there is nothing key lime about this! Please don't confuse regular lime with key lime. Anything key lime will never be green, but always yellow as a true key lime is!

    Okay, I'm actually intrigued by this!!! I'm not a huge lime jello fan, but I think this would be fun to make and we'd all probably love it. I'm sure the marshmallow compliments the lime well! :)

This is the lowest weight I have been since I got pregnant with Dustyn and he will be 18 in February. 😳Feeling amazing, so thankful for how far I have come, but would like to lose about 20 more and tone up.

She’s super sweet and lazy. Hazel and Cocoa are starting to get along. They can walk by each other without hissing most of the time. Maybe one day the will snuggle together.

So thankful that one of Kenny’s new hobbies (out o So thankful that one of Kenny’s new hobbies (out of many) is auto detailing. My car stays clean the majority of the time. Plus, he researched for hours how to do ceramic coating so now the paint is protected and it should be easier to keep clean. The photo does not do it justice. It’s super slick and shiny.

I'm still in awe of how far my library and plant r I'm still in awe of how far my library and plant room have come. Every time I step inside, I feel so happy to see my shelves filling up and my collections growing. 🙌🏼

Still on my to-do list: a gallery wall and living wall, but I'm a bit nervous since I'm not exactly good at that. One day, though... I also dream of getting a projector to display scenes on the big white wall.

I'm going to miss my Halloween decorations when they come down - time to start scouring thrift stores for Christmas decor, I suppose! 🎄

Carsyn’s first day of school. This might be his la Carsyn’s first day of school. This might be his last, first day of middle school. He technically would be in 10th grade this year but we have kept him at the middle school for longer, we love his teachers, plus he will be able to stay in high school until he’s 21.

It may not be perfect or Instagram “worthy” but it’s mine and I’m proud of all the time and effort we have put into it. The rug arrived today. I am so pleased with how it is coming together. Thanks so much to my cousin @r_holz9 for all her decorating advice and @em.e.hicks for putting up with my million text messages. IKEA bookcases will be here tomorrow. Then need to paint them and start moving my books out there. After I finish with that, I will work on my living plant wall. Not sure when my low bookcases and desk will be built, but it will happen eventually. Almost there. 🙌🏼
