Recipe 8/52 for my 30 before 30 list. I am making and blogging about one new recipe a week. This week I made Chocolate Chip Banana Bread out of one really brown banana. Don’t you hate it when you only have one over-ripe banana left? Most of the time I would just toss it. I didn’t think that I could actually make banana bread with it, but I was wrong. I came across this recipe and it is amazing!
Definitely check out this recipe if you have a brown banana sitting on your counter top that you are contemplating throwing away. We won’t be wasting anymore around here.
Chocolate Chip Banana Bread
Sarah Halstead
Ingredients
- 1 large very ripe banana
- 1 egg with enough milk to make 1 cup
- 1 stick of butter, softened
- 1 tsp. vanilla
- 1 1/2 cups flour
- 1 cup sugar
- 1 tsp. baking soda
- 1 tsp. cinnamon
- Chocolate Chips
Instructions
- Preheat your oven to 350 degrees.
- Break your banana up into chunks.
- Put all of the ingredients (except for the chocolate chips) into your mixer bowl.
- Mix on low to medium-low until most of the chunks are gone.
- Grease the pan with butter. Then coat with sugar.
- Add chocolate chips to the batter and pour into the bread pan.
- Bake at 350 for 55-60 minutes. Check to see if it is done with a toothpick
The butter and sugar trick made the crust of this bread sweet and crispy, but the inside is soft and moist. I didn’t put a ton of Chocolate Chips in it because I didn’t want it to be over powering. I think it was the perfect amount. Just add the amount that you think you would want in your bread. It is very easy to customize this recipe for you.
What is your favorite way to use one over-ripe banana?
