Avocado Lime Tuna Salad
The other day I grabbed Carsyn from school and I was soooo tempted to just go through the drive-thru at Chickfila. Carsyn would be happy and I would be happy at the time, but not when I stepped on the scale. I knew I had a couple cans of Bumble Bee®Tuna in the pantry at home. I started thinking what would go good with tuna? I knew I had avocados that needed to be eaten. Ding, ding, ding! Perfect, I would make avocado lime tuna salad. (You know I had to add lime, since I am obsessed with all things lime!)

The key to actually sticking to eating healthy is having a few go to meals that you can make quickly when the hunger strikes. Instead of stopping to the drive-thru, you know when you get home you can whip up something delicious and healthy. Add this avocado lime tuna salad to your weekly meal plan. It is packed full of protein and vegetables. As most of you know I am in the process of becoming healthier. Therefore, I have been on the hunt for easy and healthy meals. This definitely fits the bill! If a meal takes too long to fix, it just isn’t going to happen.

Ingredients

  • 1 can of Bumble Bee Tuna
  • 2 ripe avocados
  • 1 lime, juiced
  • 1 tablespoon greek yogurt (or mayo)
  • 2 green onions
  • 1/2 red bell pepper, chopped
  • cilantro, chopped
  • garlic salt, to taste
  • black pepper, to taste

Instructions

  1. Mix together the tuna, lime juice, greek yogurt, onions, cilantro, and bell pepper.
  2. Season with garlic salt and pepper.
  3. Pack the avocado halves with the tuna salad.

Notes

Garnish with extra green onions, cilantro, and pepper.
If you really like lime you could add an extra squirt of lime juice on top.

On my diet, I pair this with some extra red bell pepper slices, and don’t eat all of the avocado. That way counts towards my lean and green meal for the day.

I always buy the Bumble Bee® Tuna in water, which is available in cans or pouches. Tuna is packed full of lean protein, healthy fat, and Omega-3s. I love that I can store the tuna in the pantry and grab a can when I need a quick and tasty meal.

An overview of our trip to Myrtle Beach. I took Dustyn, Prestyn and Annie with Kenny’s mom. Kenny, Carsyn, Mocha, Pumpkin, and Salem enjoyed a peace and quiet vacation at home.

Root check on my Thai Constellation from @tropical Root check on my Thai Constellation from @tropicalplantsusa. I got it just after Valentine’s Day. I think it is time for a repot. I’m going to wait for the new leaf to harden up and then repot it. I have been super happy with the quality.
Love my new Aglaonema Sparkling Sarah (Chinese Eve Love my new Aglaonema Sparkling Sarah (Chinese Evergreen) I picked up from @_rootsplantco this past weekend. The pink is gorgeous and I love it’s name.
6 weeks ago I cut off the top of my Monstera Adans 6 weeks ago I cut off the top of my Monstera Adansonii because it was very tall but not bushy. It was nerve wracking at first. I had 5 total cuttings that I put into water. 4 of the pieces had roots longer than 2 inches with some secondary roots. The last piece is still in water, it has some roots but not enough, so giving it a bit more time. Where I cut it is also making a new stem and I noticed further down it was trying to branch out in other places. Hopefully it takes off this Summer and becomes fuller looking.

It was soooo cold out there tonight even with the sun. The wind was whipping. It may have been in the 40s but the wind chill was in the low 30s. I think my face is wind burned. Annie did a great job playing tonight and was trying so hard to make a goal. The other team was short on players, so one of her teammates was goalie and did an awesome job stopping the ball. Annie tried a new strategy of holding the ball in between her feet until the other team gives up. 🤣 There is one clip of Prestyn (# 13). His games are harder to take video of cause his field is so big.

Two and a half months after her first tooth she fi Two and a half months after her first tooth she finally lost her second tooth. It’s been hanging on barely. Today while eating lunch I told her it was close to coming out and we would need to pull it before bed. While eating chicken teriyaki she thought she swallowed it and spit out the chicken in her mouth. I dug through it and it wasn’t there. She started freaking out. Then looked on the chair and it was sitting right there. 🤣 A similar thing happened with Prestyn on one of his bottom teeth. My kids never want to pull them out until they fall out on their own. Ha.
