Simple Meatball Sub

Recently I learned about a new brand Carando and decided to make a simple meatball sub. I had never tried anything from their brand before, but the meatballs did not disappoint. Can’t wait to try more from Carando!

They began their story almost a century ago along the cobblestone streets of Torino, Italy. Peter Carando, the founder, learned the Italian tradition of sausage-making while being an apprentice at his local butcher shop.He set sail for America with his own authentic recipes in hand. He begin handcrafting the finest Italian meats this country had ever tasted. Carando has remained true to those recipes to this day. This has helped Carando earn its place as one the world’s finest purveyors of Italian deli meats.

I love having meatballs for dinner but I never enjoyed gathering all the ingredients and forming them into balls. I found the Carando ready made meatballs at Food Lion close to the hamburgers that are already pattied up.

Simple Meatball Sub

Ingredients

  • 1 16oz Package Caranodo Abruzzese Meatballs
  • 1 tbsp butter
  • 1 small onion
  • 1 tsp minced garlic
  • 1 tsp italian seasoning
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 15oz can tomato sauce
  • 2 tbsp tomato paste
  • 4 hoagie sandwich rolls
  • 1 tbsp melted butter
  • 4 slices provolone cheese

Instructions

  1. Cook meatballs according to package instructions.

  2. While they are cooking, heat butter in medium saucepan over medium-high heat. Sauté onion until tender. Add garlic, Italian seasoning, black pepper and salt; sauté for 1 minute.

  3. Add tomato sauce and paste; simmer for 10 minutes. 

  4. Add the cooked meatballs; simmer for another 5 minutes. 

  5. Slice hoagie rolls down the center and brush with melted butter. Place under broiler until toasted. 

  6. Return the subs to broiler until cheese is melted and browned.

Our son Carsyn loves meatballs subs so he really enjoyed this simple meatball sub. Normally I would go out and buy him a sub because I never wanted to make them. This saves the hassle & money of going out to eat. Now we can make them at home, enjoy the extra time together, and they taste even better.

We saw a third eye doctor. We are going to try glasses for two months and also try to prevent her from closing or covering her left eye. Along with having her focus on something brought to her nose throughout the day. Then recheck. She did mention alternate patching. Even though they see it in both eyes it is more prominent in her left eye. If neither one is helping then we will do surgery.

20|365 Annelyn did amazing at the allergist today. 20|365 Annelyn did amazing at the allergist today. I felt so bad when they were poking her back. I shared a photo in my stories of her back. They tested for dairy, eggs, green beans and pork. She previously had a reaction to green beans and bacon so they wanted to check that. The dairy and egg still had a reaction, but the doctor feels it is small enough that we can start trying eggs and dairy in small portions. Her egg reaction is a little less than dairy so we are going to try that first. 

I let her pick out a toy and she picked this baby yoda.

14|365 Sweet girl. Little update we are going for 14|365 Sweet girl. Little update we are going for a 3rd opinion next week at an office that offers vision therapy. I am going to see if they think therapy and/or glasses would help. I’m hoping that it will be an option since she is able to control it when we get her to focus. We will see. 

Thanks for all the advice and sharing your experiences. I know every child and diagnosis is different but it is nice to hear what others have done.
