Peanut Butter Fudge with Coconut Oil

This weekend I made this super simple peanut butter fudge using Crisco® Refined Organic Coconut Oil. All the ingredients are all natural and healthy. It took less then 10 minutes to prepare and only an hour in the freezer. Kenny has been doing Keto so this is the perfect recipe to satisfy his sweet tooth. I have also been trying to eat healthier with this pregnancy because last time I had gestational diabetes and this would be a treat I could enjoy. Peanut butter is one of my favorite flavors to enjoy, especially during the fall.

Peanut Butter Fudge with Coconut Oil

Crisco® Coconut Oil is a wonderful substitute for butter, margarine or other oils. Crisco® Refined Coconut Oil, which I used for my recipe has no aroma or flavor. That way you can add it to your favorite recipes without the tastes of coconut. The Crisco® Unrefined Coconut Oil still has the distinct coconut aroma and flavor.

I grabbed my Crisco® Refined Coconut Oil on one my many trips to Target. It was super easy to find and was with the rest of the cooking oils.

Peanut Butter Fudge


Ingredients

  • 1 cup Crisco® Refined Organic Coconut Oil
  • 1 cup all natural peanut butter
  • 1 tsp vanilla extract
  • 4 tsp stevia

Instructions

  1. Add the coconut oil and peanut butter into a bowl.

  2. Heat in the microwave for 10 seconds.

  3. Add the rest of the ingredients.

  4. Blend all the ingredients. (I used an immersion blender)

  5. Place in a glass dish or a loaf pan. 

  6. Freeze for 1 hour or until firm

  7. Cut into squares and store in a ziploc bag in the freezer. 

I couldn’t believe how easy this was to make. It took hardly no prep at all. The boys really enjoyed indulging in this fudge and I felt better about them eating it since it is made out of all natural ingredients. Plus, I cut them into small squares so it would be a perfect serving size for them. What is your favorite fudge recipe? Have you made fudge using coconut oil?

6 weeks ago I cut off the top of my Monstera Adans 6 weeks ago I cut off the top of my Monstera Adansonii because it was very tall but not bushy. It was nerve wracking at first. I had 5 total cuttings that I put into water. 4 of the pieces had roots longer than 2 inches with some secondary roots. The last piece is still in water, it has some roots but not enough, so giving it a bit more time. Where I cut it is also making a new stem and I noticed further down it was trying to branch out in other places. Hopefully it takes off this Summer and becomes fuller looking.

It was soooo cold out there tonight even with the sun. The wind was whipping. It may have been in the 40s but the wind chill was in the low 30s. I think my face is wind burned. Annie did a great job playing tonight and was trying so hard to make a goal. The other team was short on players, so one of her teammates was goalie and did an awesome job stopping the ball. Annie tried a new strategy of holding the ball in between her feet until the other team gives up. 🤣 There is one clip of Prestyn (# 13). His games are harder to take video of cause his field is so big.

Today while eating lunch I told her it was close to coming out and we would need to pull it before bed. While eating chicken teriyaki she thought she swallowed it and spit out the chicken in her mouth. I dug through it and it wasn’t there. She started freaking out. Then looked on the chair and it was sitting right there. 🤣 A similar thing happened with Prestyn on one of his bottom teeth. My kids never want to pull them out until they fall out on their own. Ha.

My monstera deliciosa had some droopy leaves, so I My monstera deliciosa had some droopy leaves, so I asked my friend Molly at @_rootsplantco what she thought would be best. She recommended this wooden trellis from Lowe’s that cost less than $15. I tied up the droopy leaves with twine. There is lots of room left for growth.
I made the mistake of not repotting my philodendro I made the mistake of not repotting my philodendron white wizard when I first got it, I also didn’t give it enough sunlight. So it was growing soooooo slow. I finally repotted it a couple weeks ago, moved it closer to a window, and started using plant food from @happyhappyhouseplant. Not sure what made the most difference but the leaf opened and now a new one is already starting. Hoping it won’t take as long this time.

Happy Valentine’s Day! We didn’t do anything s Happy Valentine’s Day! We didn’t do anything special but did get the kids cookies and a little bit of candy. 

Annelyn is loving her new hair cut and loving her hair straightened. Swipe for some adorable photos, she came up with all her own poses. Also the very last photo is her hair before, it was a hot mess. Mollie cut off 3-4 inches and it looks much healthier now.

Sent her back to school Tuesday, then last night threw up again. She’s been eating and drinking and able to keep it all down. So not sure what is going on.
