Recipe 14/52 for my 30 before 30 list. I am making and blogging about one new recipe a week. I made this cheesy squash casserole for a cookout on Labor Day with a couple friends. It was a huge hit! Everyone loved it. This is a recipe I will be making for years to come!

Ingredients
- 6 medium yellow squash or zucchini, thinly sliced
- 1 large onion, thinly sliced
- 2 tablespoon butter
- 1/2 cup sour cream
- 1 cup shredded cheddar
- Salt
- Pepper
- Garlic
- 1/2 cup grated parmesan
Instructions
- Preheat oven to 350.
- Saute the squash and onion in a skillet for 10 to 15 minutes.
- Strain the squash to get some of the moisture out.
- Mix the sour cream, cheddar, salt, pepper and garlic (to taste) in a large bowl.
- Add the squash, stir lightly to combine.
- Place in a casserole dish.
- Top with parmesan.
- Bake for 20 to 25 minutes.
