I am so excited about October’s Recipe Roundup. We are featuring pumpkin recipes, and I love anything pumpkin. I am sharing with you all something new I haven’t ever made before. I couldn’t find one pumpkin cheesecake dip recipe I liked.  I took little bits from a bunch of different recipes and made my own. This is delicious, sweet and so creamy! I love eating it with granny smith apples, ginger snaps, graham crackers or my pumpkin shaped cinnamon/sugar chips. differentdippers copy

Pumpkin Cheesecake Dip Recipe

Ingredients

  • 1- 8 oz. Cream Cheese
  • 1/2 Cup Brown Sugar
  • 1 tsp. Vanilla
  • 1 tsp. Cinnamon
  • 1/2 tsp. Ginger
  • 1/2 tsp. Pumpkin Spice
  • 2- Boxes Vanilla Pudding
  • 1- 8 oz. Cool Whip
  • 1- 15 oz. Can Pumpkin

Instructions

  1. Mix the softened cream cheese, brown sugar, vanilla, cinnamon, ginger and pumpkin spice until thoroughly combined.
  2. Add in the powdered vanilla pudding, cool whip and canned pumpkin.
  3. Slowly mix together so you donâ??t make a huge mess. Chill until ready to serve.

    I really love that. It sounds really good. I like the serving it in the pumpkin... that is darling. Now its January, lol. I will pin this, I think my Father in Law will like this. You are right... great to take to a party.

    Did you just hollow out the pumpkin and put it in there? Or how do you go about doing that?

      Hey. I hollowed out a pumpkin then put a short drinking glass that fit well in it. Then put the dip in the glass. :)

Annie decided kind of last minute that she wanted Annie decided kind of last minute that she wanted a My Little Pony birthday party instead of a cat birthday party for the 3rd year in a row. So I had to pull it together in a short amount of time. I also didn’t take nearly enough photos.

She is so kind and loving, but won’t put up with anyone being mean. She will stand up for herself and others. She’s full of the best kind of sass. Can’t wait to see where she goes in life.

I couldn’t see the aurora borealis with my naked I couldn’t see the aurora borealis with my naked eye but my phone camera showed them. Last time there was a possibility to see them it was too cloudy so at least I got these. Maybe one day I will see the real deal.
