Pumpkin Cheesecake Cookies

Ingredients

  • 1 8 oz. cream cheese
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 cup graham cracker crumbs
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon

  • 1/2 cup graham cracker crumbs
  • 1/2 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 350.
  2. Mix together your room temperature cream cheese, butter and pumpkin until smooth.
  3. Stir in the sugar and vanilla.
  4. Add the flour, 1/2 cup graham cracker crumbs, pumpkin pie spice and cinnamon. Mix until smooth.
  5. Place tablespoon size cookies on parchment paper or greased cookie sheets.
  6. Combine the 1/2 cup graham cracker crumbs and 1/2 teaspoon pumpkin pie spice.
  7. Sprinkle with the graham cracker/pumpkin pie mixture.
  8. Bake for 15 minutes.
  9. Take a spoon and flatten the cookies a little.
  10. Bake for an additional 3-5 minutes.
  11. Remove from cookie sheet, allow to cool, and put them in the fridge.
  12. They are best served chilled.
