Hey friends! Hope you all are having a better week then I am. Carsyn ended up in the children’s hospital with RSV and the doctor thinks that Prestyn has it too. Thankfully Prestyn seems to be doing better and Carsyn only had to spend one day in the hospital and is home now. I made these adorable rainbow fruit skewers to brighten my day because it has been so cold and not spring-like lately.

Rainbow Fruit Skewers with Cream Cheese Dip
Ingredients
- strawberries
- cuties
- pineapple chunks
- kiwi slices
- blueberries
- red grapes
- cake pop sticks
for the dip
- 1 8 oz cream cheese softened
- 1 teaspoon vanilla extract
- 2 tablespoon truvia baking blend
- 2 tablespoon heavy whipping cream
Instructions

Carefully add the fruit starting with the grapes, blueberries, kiwi, pineapple chunks, cuties, strawberries.
for the dip

Add all the ingredients to your mixer and blend until well mixed.
Recipe Notes
I left the skin on the kiwi so that it stayed together better.
The dip was pretty sweet so if you like your dip a little less sweet you can half the sweetner or leave it out all together.
These were super easy to make and would be a great snack to have on St. Patricks Day. Or for your next family movie night.
