Key Lime Yogurt Ice Cream Sandwiches

containers Vanilla Bean Yogurt

Key Limes

Gingersnap Cookies
Instructions
Mix the Vanilla Bean Yogurt and the juice from 2 key limes in a small bowl.
Place in the freezer for 1 1/2 hours. You want it softly frozen.
Take approximately a tablespoon of the key lime yogurt mix and put on a gingersnap cookie.
Place another cookie on top and put on a plate in the freezer.
You will want to place each one in the freezer as you go.
Freeze for 2 hours.
